Supersized Reeses Peanut Butter Cup

I bloody love a Reeses Peanut Butter Cup. I know the chocolate is a bit naff, but I find them so moreish and basically anything with Peanut Butter in is my weakness. But, I find their so-called “Big Cups” to a bit of a misnomer. I mean, by USA standards, they’re really quite small.

So, for my 500 subscriber special on my YouTube channel I decided to level up the Reese’s Peanut Butter “Big Cup” to a MIGHTY CUP by creating my own supersized version of the Peanut Butter Cup. Surprisingly quick and simple, if you’re a lover of Reese’s and Peanut Butter like I am, then you’re going to want to give this a go!

Supersized Reeses Peanut Butter Cup

Ingredients

  • 250g Unsalted Butter
  • 500g Icing Sugar
  • 640g Smooth Peanut Butter
  • 1 Tsp Vanilla Extract
  • 1 Tbsp Milk
  • 1kg Chocolate, melted
  • 12" Tart Tin

Instructions

Place your 12" Tart Tin into the freezer

Add the butter into a bowl and beat for a couple of minutes until pale and fluffy

Add in half the icing sugar and beat into the butter until combined

Add in the other half of the icing sugar and beat again until you get a smooth buttercream

Add in the milk and vanilla extract and combine with the buttercream

Add in the peanut butter and beat into the buttercream until well combined and set to one side

Place a shallow pan of water over a low heat and bring to the simmer, the place a bowl over the top and add the chocolate chips

Gently stir the chocolate chips until completely melted

Remove the tart tin from the freezer and add some of the chocolate into it to coat the base and the sides of the tin - work quickly as the cold tin will cause the chocolate to set quickly

Place back into the freezer for five minutes to allow the chocolate to set

Remove the chocolate shell from freezer and fill with the peanut butter mixture and smooth out to the edges

Place back into the freezer for 5 - 10 minutes to allow the filling to firm up

Pour over the rest of the chocolate and smooth out to the edges of the cup leaving no gaps

Place back into the freezer for 15 - 20 minutes to set up completely and then server and enjoy!
